Tartiflette is a French dish from the Savoy region in the French Alps. It is made with potatoes, reblochon cheese, lardons, and onions. Nothing to do with tartiflette in white wine. Serve with a white wine or a red wine of savoy. Savoyard recipe.

Ingredients:

* 1kg of potatoes
* 2 large onions
* 450g of bacon
* 1 reblochon
* Fresh cream
* Butter
* Salt, pepper

Method:

* Preheat oven 180 ° C. Steam the potatoes.

* Meanwhile, make the onions brown in a buttered skillet and set aside.

* Sweat the bacon in the onion pan, drain the bacon, keeping the fat of the cooking. Dice the cooked potatoes, then sear them in the baking juices of the bacon.

* If necessary, add butter. In a gratin dish, make the first layer of potatoes. Salt, pepper, cover with onions and cream, a layer of bacon.

* Repeat this step.

* Scrape the reblochon and cut it lengthwise in half.

* Place each half of the rind crust on top, so that the surface of the dish is covered.

* Bake for 20 minutes, until the cheese is melted, then leave to brown.

Ingredients:

* 6 potatoes
* 200g fresh tomme
* Olive oil
* 1/2 untreated yellow lemon
* Salt, pepper

Method:

* Cook the potatoes in a saucepan of boiling salted water for 20 minutes.

* Once the potatoes are cooked, drain them in a colander and then peel them and cut into slices.

* Squeeze the half lemon yellow to get its juice. Remove the seeds if necessary.

* Heat a drizzle of olive oil in a saucepan.

* Brown the potato slices for about 10 minutes, stirring well.

* Cut the fresh tomme into pieces and add it to the potato slices in the saucepan.

* Add the juice of the half lemon, then salt and pepper to your liking.

* Let cook for 15 minutes, stirring occasionally, until the tomme is melted well.

* At the end of the cooking, adjust the salt and pepper seasoning if necessary.

* Serve this truffade with fresh tomme cheese on the plates and accompany with a green salad seasoned for the main course.

The Gratin Dauphinois is a great classic of French family cooking. It is a dish made with potatoes and fresh cream from the Dauphiné region. According to the recipes handed down from generation to generation, this gratin contains more or less fresh cream, according to the resources of the family.

Ingredients:

* 1kg of potatoes
* 1 clove of garlic
* 40cl liquid cream
* 60cl of milk
* Grated cheese
* 3 pinches of nutmeg
* Salt pepper

Method:

* Preheat to 180 ° C.

* Peel and wash the potatoes. Cut them into thick slices and drain them.

* Place the potato slices in a saucepan. Add milk and cream.

* Bring to a boil. Add salt and pepper. Season with nutmeg.

* Peel the garlic clove by removing the germ. Cut it in half. Rub the cooking dish with the garlic clove.

* Pour the potato slices, milk, and cream into the dish. Sprinkle with grated Gruyere cheese.

* Bake the dauphinois gratin for 1 hour to 1:15 for the potatoes to be melted.

* Remove the gratin when golden brown and serve immediately. This gratin dauphinois marries perfectly with a beautiful roast beef or chicken legs simmered in sauce.

For this gratin dauphinois, you can vary the pleasures by adding onions at the same time as the potatoes. For the last touch, you can beat an egg with a little milk which you will pour on the gratin at the end of cooking. Then refresh for 15 minutes. If the milk boils, lower the oven temperature.

For an evening in front of the television, a meal between friends or a family dinner, quickly makes a delicious Savoyard pizza with flavors of the mountain, garnished with a beautiful reblochon and potatoes.

Ingredients:

* 1 roll of pizza dough
* 1 small pot of 10cl of thick cream
* 3 small potatoes
* 1 tray of 75g diced ham
* 1 reblochon
* 1 sachet of 70g grated Gruyere

Method:

* Preheat the oven to 180 ° C.

* Unroll the roll of pizza dough. Place on a baking sheet covered with greaseproof paper. Spread the thick crème fraîche on the pizza.

* Peel, wash and cut the potatoes into not too thin rounds. Spread them over the pizza covered with thick cream.

* Add the diced ham.

* Cut the reblochon into thick enough strips and place them on the Savoyard pizza (5 slices no more). Sprinkle with grated Gruyère cheese.

* Bake your Savoyard pizza for 25 minutes. Serve immediately, accompanied by a nice green salad with the vinaigrette.

Chicken Basquaise is a dish that defines the simple elegance of French Basque cooking. The peppers, onions, and garlic are cooked until they are melting, then topped with some pimento d’Espelette and browned chicken.

Ingredients:

*1 chicken (non-farming)
* 3 cloves of garlic
* 3 onions
* 700g red peppers
* 1 kilo of tomatoes
* Bouquet garni
* Olive oil
* Salt pepper

Method:

* The traditional recipe for Chicken Basque starts with cutting your chicken into pieces. If you are not comfortable with this technique, you can also choose to buy directly from the thighs and whites of pre-cut chickens.

* Cut the peppers in two, seed them under the water and cut them into strips. In a separate bowl, crush the garlic and onion.

* Peel the tomatoes, cut them and eliminate the inner hard parts.

* Prepare a pot that you will heat with four tablespoons of olive oil. Pour in the garlic, onion, and peppers and fry over low heat for about 5 minutes, making sure to mix continuously with a wooden spoon.

* Then add the tomatoes and cook covered for 20 min at low heat so that the mixture slowly simmer and releases all the flavors proper chicken basquaise.

* Meanwhile, salt and pepper the chicken pieces and brown on all sides in a pan with olive oil. When the tomato pepper mixture is ready, add the chicken pieces and bouquet garni to the mixture.

* Salt and pepper to taste again and cook for 35 minutes so that chicken takes color and flavor. Finally, enjoy your chicken basquaise warm that you can accompany with a basmati rice or a mixture of wild rice.

Ingredients:


* 70 ml cold-pressed rapeseed oil, plus extra for greasing
* 2 medium carrots, (100g)
* 1 beetroot, (100g)
* 2 parsnips, (100g)
* 1 orange
* 120g quality maple syrup
* 2 large free-range eggs
* 150g wholegrain spelled flour
* 1 pinch of mixed spice
* 1 teaspoon baking powder
* 60g dried apricots, preferably sulfured
* 40g pumpkin seeds, plus extra to decorate
* Edible flowers, to decorate (optional)

Yogurt & Honey icing

* 150g cheese cake
* 150g Greek-style natural yogurt
* 25g clear runny honey
* ½ teaspoon quality vanilla extract
* 1 lemon

Method:


* Preheat the oven to 180ºC/350ºF/gas 4. Grease the base and sides of an 18cm loose-bottomed cake tin with a little rapeseed oil, and line the base with baking paper.

* Peel and grate the carrots, beetroot, and parsnip into a large bowl. Finely grate the zest of the orange and add two-thirds to the veg (reserving the rest for the frosting) along with the maple syrup, eggs, and rapeseed oil. Fold in the flour, spice, baking powder and a pinch of salt.

* Finely dice the apricots, then add to the bowl along with the seeds. Mix everything until well combined.

* Pour the mixture into the prepared tin and bake for 35 to 40 minutes, rotating the tin after 20 minutes, until the top is light pinky-golden and bounces back when pressed lightly, and a skewer inserted into the center comes out clean. Leave to cool in the tin.

* Meanwhile, to make the icing, whisk together all the ingredients except the lemon, and most of the reserved orange zest, until completely smooth. Squeeze in a tiny bit of lemon juice and whisk in. Cover and pop in the fridge until needed.

* When the cake is completely cool, transfer to a plate or stand, then finish with the icing, smoothing it all over the top of the cake with the back of a spoon.

* Decorate the cake with the remaining orange zest, extra pumpkin seeds, and edible flowers, if you like, then serve.

* This cake can be kept for up to five days in a sealed container in the fridge.

Ingredients:


* 1 medium sized piece of chicken with bone(2kg)
* Olive oil

Filling

* 4 red onions
* 4 carrots
* 4 sticks of celery
* 1 medium swede
* A few sprigs of fresh rosemary
* 1 heaped tablespoon plain flour

Topping, sides and bottom

* 2.5kg Maris Piper potatoes
* 2 good knobs of unsalted butter
* 100g Cheddar cheese
* 2 sprigs of fresh rosemary
* 60g fresh breadcrumbs

Method:


* Preheat the oven to 170°C/325°F/gas 3.

* In a snug-fitting high-sided roasting tray, rub the chicken all over with a little oil and a good pinch of sea salt and black pepper. Add a splash of water to the tray, then roast for 4 hours, or until the meat is tender and will fall away from the bone.

* Remove from the oven and leave to cool in the tray, then lift the chicken out onto a board, take all the meat and crispy skin off the bone and roughly chop it, reserving the bones.

* Skim away any fat from the tray and pop it into a clean jam jar. Add a splash of boiling water to the tray and stir around to pick up all the lovely sticky bits from the bottom. Keep it all to one side.

* For the filling, peel and roughly dice the onions, carrots, celery and swede, then put them into your biggest pan on a medium-high heat with 2 tablespoons of reserved chicken fat. Strip the rosemary leaves, then fry the veg for 20 minutes, or until lightly caramelized, stirring regularly.

* Stir in the flour, chicken bones and tray juices, then pour in 1.5 liters of water. Bring to the boil, then put the lid on and reduce to a gentle simmer for 40 minutes, or until you’ve got a loose, stew-like consistency, stirring occasionally.

* To guarantee intense gravy and a tender but dense filling, remove and discard the bones, then place a large coarse sieve over a pan and, in batches, spoon the chicken stew into the sieve. Let the gravy drip through, and after a couple of minutes, when you get a dense pile of meat and veg in the sieve, transfer that to a bowl, leaving the gravy in the pan.

* Separately freeze half the cool meat and gravy for another day.

* For the topping, sides, and bottom, peel and roughly chop the potatoes and cook in boiling salted water for 12 to 15 minutes, or until tender. Drain and leave to steam dry, then add the butter, grate in half the cheese, season to perfection with salt and pepper, mash well and cool completely.

* Preheat the oven to 200°C/400°F/gas 6.

Use a little-reserved chicken fat to grease the inside of a large pie dish (25cm x 30cm), then pick and tear over the rosemary leaves and sprinkle with half the breadcrumbs – they’ll stick to the fat and add an incredible crunch.

* A handful at a time, press the cooled mash into the dish, covering the bottom and sides with a 1cm-thick layer. Spoon in the filling and a couple of spoonfuls of gravy, smooth out, then top with the remaining mash, pat it flat, scuff it up with a fork and pinch it at the edges.

* Grate over the rest of the cheese, scatter with the remaining breadcrumbs and drizzle lightly with oil. Importantly, bake on the bottom of the oven for 1 hour 10 minutes, or until crisp and golden.

* Warm your gravy through (reducing if desired), then serve the pie with loads of seasonal greens or peas and lots of condiments.

Even though it has a strong British heritage, America has embraced the apple pie to the point that it’s now considered a quintessentially American dessert. American pies often look like the ones from those Desperate Dan comics – big, robust and full of attitude. It is now also cooked in India, very few people know about this dessert. "Mom's Magic Food" presents you the delicious pie that you can't wait to eat a bite.

Ingredients:

For the pastry:

* 500g plain flour, plus extra for dusting
* 100g icing sugar
* 1 pinch sea salt
* 250g unsalted butter, chilled and cut into cubes
* 2 large free-range eggs
* 1 splash milk

For the filling:

* 10 Granny Smith apples, peeled, cored and halved, 3 sliced
* 2 oranges, juice and zest of
* 7 heaped tablespoons caster sugar
* 400g huckleberries or blueberries
* 1 heaped tablespoon plain flour
* 1 large free-range egg, beaten
* 1 small handful demerara sugar
* Good-quality vanilla ice cream, optional, to serve
* Cream, optional, to serve
* Custard, optional, to serve

Method:


* You can make your pastry by hand, or simply pulse all the ingredients in a food processor. If making by hand, sieve the flour, icing sugar and salt from a height into a large mixing bowl. Use your fingertips to gently work the cubes of butter into the flour and sugar until the mixture resembles breadcrumbs.

* Transfer a handful of this mixture to a separate bowl, rub it between your fingers to get larger crumbs, then put aside. Add the eggs and milk to the main mixture and gently work it together until you have a ball of pastry dough.

* Sprinkle a little flour over the pastry, then wrap it in cling film and pop it into the fridge to rest for 1 hour.

* Meanwhile, put the apples into a large pan with the zest and juice of 1 orange, a splash of water and 5 tablespoons of caster sugar. Cover the pan and simmer on a medium heat for 10 minutes, until the apples have softened but still hold their shape.

* Remove from the heat and leave to cool. Scrunch a handful of berries in a bowl with the remaining caster sugar and the zest and juice of your remaining orange. Add the rest of the berries. Toss the cooled apples and their juices in a large bowl with the berries and the flour, then put aside.

* Preheat your oven to 180ºC/350ºF/gas 4. Take your ball of pastry out of the fridge and let it come up to room temperature. Get yourself a pie dish around 28cm in diameter. Flour a clean surface and a rolling pin.

* Cut off a third of your pastry and put that piece to one side. Roll the rest into a circle just over 0.5cm thick, dusting with flour as you go. Roll the circle of pastry up over your rolling pin, then gently unroll it over the pie dish.

*  Push it into the sides, letting any excess pastry hang over the edge. Tip in the fruit filling and brush all around the edge of the pastry with some of the beaten egg. Roll out the smaller ball of pastry about 0.5cm thick and use your rolling pin to lay it over the top of the pie.

* Brush it all over with more beaten egg, reserving a little. Sprinkle with the reserved crumble mixture and the demerara sugar.

* Fold the scruffy edges of pastry hanging over the sides back over the pie, sealing the edge by twisting or crimping it as you like. Brush these folded edges with your remaining beaten egg. Using a small, sharp knife, cut a cross into the middle of the pie.

* Place on the bottom of the oven and bake for 45 to 55 minutes, until golden and beautiful. Serve with ice cream, cream or custard.

These silky little omelets filled with Mexican-inspired deliciousness. Making and eating them is brilliant fun, and they’re unusually fulfilling for a humble omelet.

Ingredients:

* 1 ripe avocado
* 3 limes
* ½ a bunch of fresh coriander, (15g)
* 3 tablespoons fat-free natural yogurt
* Olive oil
* 1 small onion
* 1 carrot
* ½ white or green cabbage
* 1 fresh red chili
* 8 large free-range eggs
* 60g Cheddar cheese

Method:

* Squeeze the avocado flesh into a blender, discarding the stone and skin.

* Squeeze in all the juice from 2 limes, rip in the coriander stalks, add the yogurt and a splash of oil and whiz until smooth, then season to perfection.

* Peel the onion and carrot. Ideally in a food processor, or using a box grater and good knife skills, grate the onion and carrot, then finely slice the cabbage. Very finely slice the chili by hand, then tip everything into a large bowl.

* Add most of the coriander leaves, then pour over the avocado dressing and toss together well. Taste and season to perfection again, if needed.

* Whisk all the eggs together in a bowl, with a splash of water to loosen and a pinch of sea salt and black pepper.

* Put a large non-stick frying pan on a medium-low heat. Once fairly hot, put in a tiny drizzle of oil followed by a quarter of the egg mixture.

* Swirl it all around the pan, grate over a quarter of the cheese and let it melt, then cook the omelet gently without coloring it, so it’s soft, silky and smooth, for just under 2 minutes, only cooking on one side.

* Slide it onto a plate, spoon over a quarter of the avocado slaw, then gently fold up the sides and roll over. Serve with a wedge of lime and a few extra coriander leaves.

* Repeat with the remaining ingredients.

* Preheat the oven to grill.

* Wash the courgettes, cut off the ends and cut them into slices. Peel the onions and cut them in half. Clean the mushrooms. Strain the cherry tomatoes. Cut the fish into cubes.

* Sew the pieces of fish and vegetables alternately on wooden skewers. Sprinkle with herbs of Provence.

* Place the skewers on a baking sheet covered with foil. Add salt and pepper. Sprinkle with a drizzle of olive oil and bake.

* Bake for about 15 minutes, turning skewers regularly.

Ingredients:

* 150g cooked rice Thai recipe

* 1 knob of butter
* 1 C. Of nuoc-mam (Suzi Wan)

Method:

* Drain the crab and crumble it. Cut the spring onions into pieces.

* Heat the rice 2 minutes in the microwave. In a skillet or wok, melt the butter, fry the spring onions 20 seconds, add the crab, fish sauce.

* Mix well. Then add the rice and coriander.

* Mix again. Serve immediately.

This caramel pork dish, although extremely popular, is no less delicious. The Chinese version is similar, except that soy sauce is used instead of nuoc mâm. With the nuoc mâm, the taste of the meat is better.

Ingredients:

* 1 kg of pork tenderloin
* 4 eggs
* 5 c. Of nuoc mâm
* 4 c. Coffee
* Some sesame seeds
* 1 ginger tuber (optional)
* 1 C. Peanut oil

Method:

*Cook the eggs for 10 minutes in a pot of boiling water to make boiled eggs. Then, flake them and cut them.

* Cut the pork into cubes of 3 cm. Cut the ginger into matchsticks.

* In a skillet, melt over medium heat 2 tbsp. Of red sugar. Let cook, stirring often, until the sugar has a very dark brown complexion. Add 2 tsp. In cold water, mix well to get liquid caramel.

* Heat a pan over high heat for 2 minutes. Pour in the peanut oil and, by tilting the casserole in all directions, let heat for 30 seconds. Add the pork, brown for 5 minutes, stirring often.

* Pour in 2 cups of water, cover, turn to medium heat and simmer for 30 min.

Ingredients:

* Vegetable chop suey (Suzi Wan): 1 jar
* Germ of soybean (Suzi Wan): 1 jar
* Bamboo shoots (Suzi Wan): 1 box
* Nuoc-mam (Suzi Wan): 2 tbsp. soup
* Soy sauce (Suzi Wan): 1 tsp. soup
* Purée of chili (Suzi Wan): 1.5 c. Coffee
* Fresh ginger (2 cm): 1 piece
* Garlic 2 cloves
* Oil 2 tsp. soup

Method:

* Peel the ginger and garlic, crush the garlic.

* Drain the vegetables.

* In a wok or skillet, heat the oil, fry the vegetable Chop suey, bamboo shoots, garlic and ginger for 3 minutes, stirring.

* Add the soy sauce and fish sauce, stir and cook over low heat for 2 minutes.

* Remove from heat and add the bean sprouts, chili paste, mix, cover and cook for 3 min.


Serve hot as it is, with rice or as an accompaniment to meat jumped.



Family dish of Italian origin, the lasagne are easy to prepare and to decorate according to its desires. Everyone has their own recipe, whether in its classic version in Bolognese tomato sauce and ground meat or with salmon and spinach. Ingredients:

* 2 chicken breasts
* 1 jar of 400g tomato sauce cooked without meat
* 1 pack of lasagne sheets
* Béchamel sauce
* 1 can of 400g chopped mushrooms
* 1 onion
* 1 c. Olive oil
* 70g grated cheese
* Salt pepper

Method:

* Preheat oven to 180 ° C (gas mark 6).

* Wash and cut the chicken into small cubes.

* Peel the onion and slice it. Make it back to the pan in olive oil. Add the chicken. Season with salt and pepper and continue cooking for 5 minutes. Then add the drained mushrooms.

* In a gratin dish with high sides, place a tomato sauce layer. Cover with lasagna leaves. Coat them with a layer of béchamel. Add a layer of chicken and mushroom stuffing. Pour back tomato sauce.

Method:

* Preheat the oven to 180 ° C(Gas mark 6).

* Wash and cut the cauliflower into small florets. Immerse them in boiling salted water for 20 min. Drain.

* Prepare Bechamel.

* In a saucepan, melt the butter and add the flour.

* Add salt, pepper, and nutmeg.

* Parsley

Method:

* Cook the potatoes and cauliflower in a little-salted water with chicken broth.

* Smash and let it cool.

* Cook the minced meat with the onion, parsley, and salt.

* Nutmeg
* 80g flour
* 1 large onion
* 150g Parmesan cheese
* 60g butter
* Salt pepper

Method:

* Make brown the onions in a pan and add the meat that we will roast and sliced mushrooms. Meanwhile, peel the tomatoes (just scald them).
