Recipe Of Lemon Curd Cookies

Ingredients:
* 100g soft butter
* 4 untreated lemons
* 4 whole eggs
* 200g caster sugar* 2 c. Coffee cornflour
* For Decoration:
* 6 cookies
* Chantilly
* Blueberries
Methods:
* Cut the butter into small cubes. Rinse the lemons, dry them and, using a zester knife, draw zest over a bowl and press their juice.
* In a pan, pour zest, and lemon juice.
* In a bowl, beat eggs. Add the sugar and butter while whisking.
* Dissolve the cornstarch in 1 c. tablespoons of this mixture and add to the saucepan.
* Cook over very low heat while beating until thick preparation.
* When it is creamy, filter it through a strainer to a fine grid or a Chinese and pour immediately into a glass jar. Let cool.
* To serve, break roughly cookies and garnish the glasses. Top with lemon curd.
* Decorate with whipped cream swirl, a slice of lemon and some blueberries.
